Ways to Cook Sweet Potatoes

Carbs are a runner’s best friend. But there are ‘good’ and ‘bad’ carbs. Bad carbs are high in refined sugar, causing sugar crash fatigue, which is no good, especially if you are a long distance runner. An example of a ‘good’ carb for running are sweet potatoes and they should really be one of the staple foods for running.

Sweet potatoes are both healthy carbs and posses healing properties! I prefer sweet potatoes over regular potatoes because they simply taste better. But, sweet potatoes are also more nourishing than regular potatoes, too.

Sweet potatoes are high in beta-carotene, potassium and vitamin C, a trio of healthy compounds that improve adrenal gland function, revving your energy levels, helping you feel more up-beat and in the mood to run. So, if you are a fan of this flavorful potato like I am, here are super easy ways to cook sweet potatoes.
